Butterscotch Oatmeal Cookies
1/2 cup shortening
1/4 cup + 2 TBSP white sugar
1/4 cup + 2 TBSP brown sugar
1 egg, beaten
1-1/2 tsp. hot water
3/4 cup flour
1/2 tsp. baking soda
1 cup chopped pecans or walnuts, optional
1 cup oatmeal
1-1/2 tsp. vanilla
1 cup butterscotch chips
Cream shortening and sugar.
Add beaten egg, then hot water.
Add flour mixed with soda.
Add chopped nuts.
Add oatmeal, vanilla and butterscotch chips.
Drop by teaspoonfuls on ungreased (or parchment lined) cookie sheets.
Bake at 375°F. for 10-12 minutes.
