CHOCOLATE JEWELS (About 21/2 dozen) 4 eggs, separated 1/2 tsp. cream of tartar 1/2 cup butter, softened 1/2 cup sugar 1/2 cup (3 oz.) semi sweet chocolate pieces, melted 1 tsp. vanilla 1 tsp. almond extract 1/2 cup all purpose flour maraschino cherries (optional) In a large mixing bowl, beat egg whites with cream of tartar at high speed until stiff but not dry just until whites no longer slip when bowl is tilted. Set aside. In small bowl at medium speed beat together butter and sugar till light and fluffy. Beat in egg yolks, chocolate and flavorings until blended. At low speed, gradually blend in flour. Gently, but thoroughly fold in chocolate mixture into reserved whites. With mini paper baking cups, line about 2 1/2 dozen muffin or cupcake pan cups. Spoon about 1 tbsp. batter into each cup. Top each with a maraschino cherry, if desired. Bake at 325°F until puffed, about 15 minutes. Remove from pans. Cool on wire rack. Garnish as desired.
