1/2 cup butter 3/4 cup brown sugar, firmly packed 1 egg 3/4 cup all-purpose flour, sifted 1/2 cup almonds, finely chopped 1/4 cup quick-cooking rolled oats 1 Tbsp grated lemon zest 1/2 tsp lemon extract
Preheat oven to 350° F. In a small mixing bowl cream butter; gradually add sugar and cream well. Beat in egg; stir in flour. Mix in almonds, oats, lemon zest, and lemon extract. Drop by teaspoonfuls 3 inches apart onto greased baking sheets. Bake for 7 to 10 minutes.
