1 cup flour 1 cup quick cooking or old fashioned oats 1/2 tsp baking powder 1/2 cup butter or margarine, at room temperature 1/2 cup packed brown sugar 1/3 cup creamy or chunky peanut butter 1 large egg 1 tsp vanilla extract 1/2 cup unsalted dry roasted peanuts, coarsely chopped 2/3 cup chips: either semisweet chocolate, butterscotch, peanut butter, vanilla-milk, milk chocolate or a combination Preheat oven to 350° F. Mix flour, oats, and baking powder. Set aside. Beat butter, sugars, peanut butter, egg, and the vanilla in a large bowl with electric mixer until well blended. Mix on low speed, gradually add the flour mixture. Beat just until blended. Stir in the nuts and the chips. Drop rounded tablespoonfuls of the dough 2 inches apart on ungreased cookie sheets. Bake for 13 to 15 minutes or until the tops look dry and the edges are lightly browned. Tops will still feel soft to the touch. Cool on cookie sheets for 2 to 3 minutes, then transfer to wire rack to cool completely. Yield: about 24 cookies
