I have no idea if these compare to Violet's yo yos! Yoyo biscuits (cookies)This is Grandmother Egerton's recipe - she used to always sandwich the biscuits together with a filling, but you can leave them as separate biscuits (they may go further that way)! Serves 14 -16 depending on size. Degree of difficulty: Low You need: Biscuits: 6 oz (185g) butter 2 oz (60g) icing sugar 2 oz (60g) custard powder 6 oz (185g) plain flour Filling: 2 tablespoons butter, softened 4 tablespoons icing sugar, sifted few drops vanilla essence few drops colouring, if desired Method: Biscuits: Cream butter and icing sugar until light in colour and consistency. Sift custard powder and flour three times. Stir into creamed mixture. With floured hands roll teaspoonfuls of mixture into balls about the size of a small walnut. Place on greased tray and press flat using a fork dipped in flour. (You will probably need to dip the fork into the flour between every biscuit to avoid sticking.) Bake in a pre-heated 160 deg C oven for 15 - 18 minutes or until a pale golden colour. (The bottoms should be golden brown.) Cool on tray for about 5 minutes before removing to wire rack to finish cooling. Sandwich biscuits together using filling (optional). Store in an airtight container.
