The flavors of summer bathed in a delicious red wine syrup. For fullest flavor, the secret to this recipe is to cover and refrigerate for 12-24 hours before serving.
3 nectarines, washed, sliced 3 peaches, peeled, sliced 1/3 cup sugar 2 1/2 cup water 1 cup red wine 1 cup hulled and sliced strawberries
Combine red wine, sugar and water in small saucepan. Bring to a boil, remove from heat. Chill in refrigerator until cold. Transfer syrup to large bowl. Add nectarine, peach and berry slices to the syrup. Serve compote in chilled bowls.
Variations: The following serving suggestions not included in nutritional analysis:
1) Red Wine Syrup: The sugar in the original recipe has been reduced from 1 cup to 1/3 cup. If a sweeter syrup is desired, add an additional 1/2 to 2/3 cup sugar.
2) Simple Syrup can be used instead of Red Wine Syrup: 1 cup sugar and 3 1/2 cups water. Use same preparation as for Red Wine Syrup.
