Two Pear Pie 2 refrigerated, unbaked (9-inch) pie crusts
Filling: 4 large Bartlett pears 4 large Anjou pears 3/4 cup sugar 2 tablespoons flour 1/4 teaspoon nutmeg 1/2 teaspoon ginger 1/2 teaspoon cinnamon 2 tablespoons fresh lemon juice
Topping: 1/2 cup brown sugar 1/2 cup flour 1/2 cup (1 stick) butter Milk Sugar Preheat oven to 430°F degrees. Filling: Peel and chop pears into a large bowl. In a separate bowl, mix together sugar, flour, nutmeg, ginger, cinnamon and lemon juice. Mix with pears, tossing to cover completely. Place mixture in pie crust. Topping: In a small bowl, combine brown sugar and flour. Sprinkle over top of pear filling. Cut butter into chunks and drop on the pear mixture. Place second pastry crust over top of pie, crimping edges and cutting several slits in middle of crust. Brush crust with a bit of milk and sprinkle lightly with sugar. Bake for 1 hour or until pie is firm. Makes 8 servings.
