Baked Semolina Pudding Preheat oven to 200ºC. Butter a baking dish very well. Bring 1 litre milk and 130g caster sugar (superfine sugar) to the boil. Pour 120g semolina slowly in a stream into the boiling milk while whisking constantly. Set aside for 5 minutes. Now add 3 whole eggs (one at a time), then 125g smooth ricotta cheese and ½ cup sultanas. Fill everything into the baking dish and bake for 20 minutes or until golden.
