Brown Sugar Apple Grunt
Serves 6
125g unrefined soft brown sugar 2 tbsp butter 150g plain flour 1/2 tsp salt 1/2 tsp baking powder 125ml double cream 1 vanilla pod, seeds scraped out 1 egg 8 red delicious, jonathan or fuji apples, peeled, cored and sliced 2tbsp unrefined soft brown sugar
For the topping:
1 1/2 tbsp butter 1 1/2 tbsp plain flour 2 tbsp unrefined soft brown sugar 1/2 tsp cinnamon
Preheat the oven to 180oC. Cream the sugar and butter. Mix the flour salt and baking powder in a large bowl and add the butter mixture. Whisk the cream with the vanilla seeds and egg and whisk into the flour mixture until smooth. Arrange the apple slices over the bottom of a buttered baking dish, sprinkle with the sugar and add the batter in big blobs.
To make the topping, rub the butter into the flour until you have a coarse crumb mixture. Stir in the brown sugar and cinnamon. Sprinkle over the batter, pinching into small lumps as you go. Bake for 35-40 minutes. Serve hot with cream or ice-cream.
