1 head romaine lettuce, torn into bite-sized pieces 1 head Boston lettuce, torn into bite-sized pieces 1/4 cup egg substitute or 1 pasteurized egg 1/4 cup olive oil 2 cloves garlic, minced 1 Tbsp. lemon juice Salt and pepper to taste 1 tsp. Dijon mustard 1 2-oz. can anchovy fillets (optional) Croutons Fresh grated Parmesan cheese
Place lettuce in a large salad bowl. Combine next 6 (or 7 if you include the anchovy) ingredients in a blender and blend until smooth. Just before serving, drizzle dressing over salad and top with croutons and cheese.
The Skinny: Use fat free croutons.
