HOT GERMAN POTATO SALAD 1 pound new potatoes, cut in half 1 pound bacon, save grease 1/3 cup wine vinegar 1 teaspoon seasoning salt 4 tablespoons chopped scallions Pepper, to taste Chopped egg, optional Boil potatoes until done, and drain. Cook bacon; save 61/37 cup grease for dressing (see note). For dressing, mix reserved grease from bacon, vinegar and seasoning salt in a saucepan. Bring to boil. Add to potatoes; toss with scallions, bacon, pepper and chopped egg, if using. The potato salad is best served warm. Note: You can double the recipe or add more bacon and scallions, to taste. Taste the dressing and make sure the mixture isn't overpowered by bacon grease. If it is, add additional seasoned salt and vinegar.
