Really, the heading says it all. At a lunch the other week, my neighbour served thickly-sliced tomatoes, topped with a little basil pesto in the center of each slice. On top of that she placed a tiny bocconcini cheese, then sprinkled a few fresh basil leaves around. The red, white and green looked lovely, and the tomatoes were delicious.
Dd and I bought some fresh basil yesterday and made a batch of pesto, part of which was used to do tomatoes as above. They really were yummy, with a very fresh taste.

Sounds like you did well.
I think at the moment we have a major problem with our blender thingo. ds put some ice in the bottom and broke it. Then, first time ever, dh used the old food processor, the part that was still working and left it on the stove and turned the wrong hot plate on!!
So the only thing left is to fix the ancient mixer that has an attachment, or save for a new one. I guess the next time we try to make something yummy we will get motivated to do something. I don't think we can live without one now.

I only have a really little food processor, plus one of those stick blenders that the kids had to have but no one uses. I'd imagine a blender would be very handy. The recipe for this pesto actually calls for a mortar and pestle, which I don't have, but it did make me wonder whether that would work well in terms of controlling the texture better.

I have always wanted one but they seemed expensive. They are probably easier to find these days.
Now I am wondering if they are hard work lol.
