My uncle made this kind of salad, I think I will try this one and see if it tastes just as delicious.
Beetr oot & Yogurt Salad
Serves 6
1/2 bunch coriander, chopped 1/2 bunch mint, chopped 2 cups plain yogurt, preferably sheep's milk juice of 1 lemon 3 beetr oot, trimmed, peeled and grated coarsely
Place coriander, mint, yogurt and lemon juice in a bowl. Combine well and season to taste.
Place beetr oot in a bowl, pour over dressing, stir gently and serve.
This salad makes an excellent accompaniment to lamb or chicken.
If you prefer your salad to be more tart, add extra lemon juice.
For a delicious variation, add 1 teaspoon ground cumin seeds to the dressing or whole, roasted cumin seeds ground in a mortar and pestle.
