6 small baking potatoes~ scrubbed and dried 1/4 cup safflower oil margarine~ melted 1 cup shredded cheddar cheese alternative 1/4 cup real bacon pieces 1/4 cup diced green onions freshly ground pepper
Pierce the potatoes several times with a fork. Place in the microwave on high for 14 - 18 minutes. Turn if you don’t have a carousel, half way through cooking. Remove when they are tender after piecing. Cool completely Cut potatoes in half. Scoop out the potato ~ leave a thin layer along the skin. Place skins on baking sheet, cut side up. Brush entire inside of potato with melted safflower margarine. Reserving most of the potato scooped out for hash browns or other potato dishes you like. Take about 1-2 tablespoons of mashed potato per skin and place back in skin. Sprinkle cheese you are using bacon, and any other topping you choose. Finish with the green onions and pepper. Return to microwave, cooking long enough to melt cheese topping.
